I have the AX310 and how can i switch the sound output (e.g., Discord is to chat knob, PC game is to Game knob) out

Typically,  AX310 default communication apps (e.g., Discord, Voicemod, Teams) as Chat knob,  PC game apps (e.g., Genshin) as a Game knob.
You can also choose your own preferred audio route in Windows setting below
